It has been an incredibly busy week with birthdays, appointments in the city, and a husband with toothache that resulted in an abstraction that didn’t go as smoothly as he imagined; however, the offending molar, which turned out to be a wisdom tooth, was removed and weeks of pain disappeared within a couple of days.
Easter weekend was one to treasure when our family came for lunch. I made a tiramisu to follow the roast turkey and ham with all the trimmings. It is an amazing recipe I found some time ago on Pinterest and, although it has several stages, it is such an easy to follow recipe. It tastes like heaven so I had to share!
CLASSIC TIRAMISU
Cream
2 large eggs, separated
1 large egg yolk
¼ cup sugar
1 tsp vanilla extract
1 cup mascarpone cheese, softened
Syrup
½ cup coffee
1 ½ oz rum
1 Tbsp sugar
Topping and Assembly
¾ cup whipping cream
1 Tbsp sugar
1 tsp vanilla extract
24 ladyfingers
bittersweet chocolate, for grating
cocoa powder, for dusting
Method
Cream
1. Whisk the egg yolks, sugar and vanilla in a metal bowl placed over a pot of gently simmering water until the mixture doubles in volume and holds a ribbon when the beaters are lifted. Remove this from the heat. In a clean bowl, whisk the mascarpone cheese into the yolk mixture until smooth. Whip the egg whites to medium peak. Fold the whites into the yolk mixture and set aside.
Syrup
1. For the syrup, heat the coffee, rum and sugar and stir just until the sugar has dissolved. Remove from the heat.
Topping and Assembly
1. For the topping, whip the cream until it holds a soft peak and stir in the sugar and vanilla. Chill until ready to use.
2. To assemble, dip the ladyfingers quickly into the coffee syrup and arrange 3 into each of 4 serving dishes. Spoon a generous layer of the mascarpone filling over the lady fingers and grate a little chocolate over top. Repeat with a second layer of ladyfingers and the remaining mascarpone filling and grating of chocolate. Dollop the whipped cream over each tiramisu and dust with cocoa powder. Chill until ready to serve.
My daughters had suggested I make Cadbury’s Crème Egg – Scotch Eggs where the sausage meat is replaced by brownie crumbs, the egg by a Cadbury’s crème egg and the breadcrumbs with chocolate sprinkles. I caved and made them three each. Decadence at its finest!
This week I finally, after decades of procrastination, went for a past life regression session. It was a truly amazing experience that put my emotions through the wringer. There were times when tears coursed down my face as I journeyed through the ages. I felt happy, sad, safe, uncomfortable and completely and totally wiped at the end of the two-hour session. As soon as I arrived home, I headed straight for my office to write up everything I had experienced so I could contemplate and try to figure out what it all meant!
I am still tired two days later which isn’t going to improve until my husband’s ‘girls’ (cows) are out to pasture for the summer. I always help out when he needs an extra pair of hands and when he buys me a dozen red roses, as he did today, how can I say no?
